These excellent Aszú berries with good structure and perfect botrytis were then macerated in fermenting must for two days. After pressing and finishing fermentation in barrel the wines were filled into Hungarian oak casks in our extensive, deep underground cellars to mature for over two years.

THE FIRST DECADE BIRSALMÁS 1991
The Birsalmás vineyard is situated on an East facing slope up, and is dominated by Hárslevelű, which gives it a lot of its charm and flavours.
During the vintage, vine growth was vigorous, with warm weather during the flowering and grape set. The Furmint bunches developed quickly. Summer was hot with some rain to swell the grapes. The warm humid autumn and long Indian summer resulted in good quality aszú berries being picked up to mid-October. Sugar levels were balanced with good acidity.
