The Aszú berries from each plot were macerated with dry base wines for up to 48 hours and then transferred into old Hungarian oak barrels for fermentation and ageing. After 2 years in our cellars a final selection for blending was made and bottled. The St. Tamas vineyard gives great minerality and aromas of apricot and plum. St. Tamas aszu 2007 has an amber colour with the scent of fresh fruits. On the palate minerality with fruitiness and minty spiciness all combined. Lively acids have a good
balance with the complex taste.

This year held many challenges but we are delighted by our 2007 Single Vineyard Aszú wines. They are rich and beautifully balanced and represent a pinnacle amongst recent vintages. The winter was mild but very dry with no frost to speak of. Sometimes this can encourage disease in the vineyard but
thanks to our vineyard management the vines remained healthy.
